Skinny Chickpea Salad Recipe

Skinny Chickpea Salad

  I absolutely am in love with this salad!!!    Not only is this salad healthy but also is so simple to make and will keep in your fridge for up to 1 week after its prepared. For best results make sure the salad chills in the refrigerator for 2 hours before serving.


Ingredients
  • 15 oz can garbanzo beans, rinsed + drained
  • 15 oz can black beans, rinsed + drained
  • 15 oz can yellow sweet corn, rinsed + drained
  • 1 English cucumber, finely chopped
  • 1 small pint red cherry tomatoes, sliced into halves
  • ½ yellow sweet onion, finely diced (you may also use red onion or green onion)
  • Dressing:
  • ⅓ cup extra virgin olive oil
  • 4 Tbsp lime juice
  • 1 Tbsp cilantro paste or use finely chopped fresh cilantro
  • 1 Tbsp minced garlic
Instructions:
  1. For salad, add all ingredients to a large bowl and cover mixture evenly with dressing. Toss salad mixture gently to mix ingredients with dressing together.
  2. Refrigerate for 2 hours before serving.
  3. Dressing:
  4. For dressing, add all ingredients into a medium size bowl and whisk until all ingredients are well mixed. Place dressing in refrigerator

This amazing bridal show not only showcases a large variety of wedding dress designers, vendors, and other big day essentials, but also gives proceeds to the breast cancer foundation and  a variety of treatment facilities for women and children. I am planning on attending this bridal show in hopes of possibly scoring a cheap designer gown for my upcoming wedding with the added bonus of being able to help women and children who are suffering with cancer. Be sure to check it out if you are planning your own wedding or know a friend or family member who is!
  • Brides Against Breast Cancer sells all brands of new designer and “gently worn” wedding gowns in all shapes and styles.

    New Jersey Festival of Ballooning: Up Up and Away!!

    If you and your significant other are looking for a fun filled day or evening you should consider taking a trip to the New Jersey Festival of Ballooning at the Solberg Airport in Whitehouse NJ.  The Quickchek NJ Festival of Ballooning is the largest summertime hot air balloon and music festival in North America!!! Held annually, the festival features twice daily mass ascensions of over 100 special shapes and sport hot air balloons, concerts, food, vendors, crafts, fireworks, a balloon glow (evening), and a 5K run. There are also many local hotel accommodations if you would like to lengthen your stay. The hot air balloon ascensions are at 6am and 6pm each day of the festival. The timing helps ensure not only a breathtaking sunrise or sunset experience but is also the calmest time of day in terms of wind. The balloons will not be released if the weather is not adequate.

    It has always been on my bucket list to go on a hot air balloon ride and this festival is a perfect opportunity to do so!

    Prices and other information:

    If you are considering taking your own ride to go up up and away during one of the mass ascensions you will need to order your ticket online for $225-$250 per rider. General admission to the festival is $25 from June 27th-July 23rd if purchased over the phone or online. General admission tickets at the gate can be purchased for $35.

    Wonderful steaks, craft beers & lots of wines by the glass in modern, lounge-style environment aglow with neon lighting.  The bar area is sleek and trendy offering a modern yet sophisticated atmosphere. Corked Wine Bar and Steakhouse offers an enormous selection of wine from all over the world. The wines range in price substantially from $6 per glass to $35 per glass. There are also a long list of wines that are only available if purchasing the entire bottle. My fiancĂ© and I had a wonderful dining experience both times we visited this restaurant. The foie gras was some of the best I have ever had. The foie gras was served atop a piece of French toast and topped with a blackberry compote. Both times we dined at Corked my fiancĂ©’s steaks were cooked perfectly. I had two different seafood entrees and they were also very good.  Corked specializes in a variety of cuisine and even offers a variety of fish specials each Friday during lent so you can be sure there will be something on the menu for everyone. Corked will also be hosting a beer and wine brunch on May 3rd 2015 with Hijinx brewing company from Allentown PA. This beer and wine brunch will feature pairings with a selection of beers and wines specifically picked to accompany each course.
